Ingredients

  • 1⁄2 lb Vienna Malt
  • 1⁄2 lb Carapils
  • 1⁄2 lb Martis Otter
  • 1⁄2 lb White Wheat Malt
  • 2 cn Alexander's Wheat Malt Extract
  • 1 pt Orange Juice
  • 1 oz Hops - Saaz
  • 1 oz Bitter Orange Peel
  • 1⁄2 oz Coriander (Crushed)
  • 1 Loose Handful White Sage Leaves (Ground)
  • 1 pk Wit Yeast (White Labs # WLP400)

Instructions

1) Heat water to 160F
2) Steep grains for 30 minutes at 160F
3) discard grains then bring tea to a boil
4) Stir in malt extract, orange juice
5) Bring to a boil, set timer for 60 minutes, add hops
6) When 30 minutes remaining, add orange peel
7) When 5 minutes remaining, add coriander and sage
8) After the boil, cool wort to 80F or less, strain it to a 6.5 gallon carboy, top up with bottled water to just over 5 gallons and pitch yeast
9) Ferment at roughly 70F for 7-10 days until fermentation is complete, then rack the beer into a keg, carbonate and enjoy.
